Spanish or Yellow Onions, peeled and sliced thin

Unsalted Butter

Sherry Wine

Heavy Whipping Cream

Instructions
Heat a large saucepot on medium high heat, then add butter and onions.
Saute onions stirring frequently until they are golden brown and soft 20-30 minutes.
Add sherry wine and reduce for 3-4 minutes.
Add cream and vegetable stock and simmer for 20-30 or until onions are meltingly soft.
Add salt and blend until smooth.
Garnish with chives, croutons, crostini with melted swiss, etc.
Notes
For an even more rich onion flavor substitute vidalia onions.
