Caramelized Onion Soup

Rich, Caramely and Velvety Soup with a Roasted Onion Flavor

  • 5 lb Spanish or Yellow Onions, peeled and sliced thin
  • 3 oz Unsalted Butter
  • 1 c Sherry Wine
  • 1 c Heavy Whipping Cream
  • 2 T Kosher Salt


  • Heat a large saucepot on medium high heat, then add butter and onions.
  • Saute onions stirring frequently until they are golden brown and soft 20-30 minutes.
  • Add sherry wine and reduce for 3-4 minutes.
  • Add cream and vegetable stock and simmer for 20-30 or until onions are meltingly soft.
  • Add salt and blend until smooth.
  • Garnish with chives, croutons, crostini with melted swiss, etc.


For an even more rich onion flavor substitute vidalia onions.
